Each piece's wood grain varies. Kiso Sawara, a cypress, contains high levels of resin, a wood that is water-resistant, durable, and has natural antibacterial properties, making it long-lasting. Excess resin may seep from the wood but is safe for use with food.
Before first use, soak in a bowl of water with 2 or 3 cups of vinegar for 1 or 2 hours. Remove the scum and rinse with water and towel dry.
Care of a ohitsu: Wash with water (hot water is fine) and towel dry excess moister and dry in a cool dry environment. Avoid humidity and excessively dry places. Store with wrapping paper in the bowl that can absorb resin that seeps from the wood. Do not soak in water for a long time. Do not use in dishwashers nor microwaves.
